Holiday Recipe

Keep the holidays healthy with this colorful and delicious recipe. Tammy made this for the office today and the bowl came home empty! Thanks to friend Sarah Albrecht for sharing with our family. Ingredients: Large dice 1 butternut squash, break 1/2 head of cauliflower into pieces, season with salt and pepper, dress with olive oil, roast on cookie sheet at 350 for 20 minutes, add sliced red onion, roast 5-10 more minutes. Toss with spinach leaves and dried cranberries. The spinach will wilt slightly from the heat of the previously roasted items. Dress with additional olive oil, salt and pepper to taste. 1 cookie sheet will serve 8-10 people. Enjoy and Merry Christmas from Dr. B and family!!
